~ Colorado Springs Airport (COS) welcomed media, partners, and community members on April 7 for its highly anticipated "Flights and Bites" grand opening event. The event celebrated the debut of two new concessions, Colorado Craft and Evolve by Hudson, and showcased the airport's ongoing ElevateCOS modernization efforts.
Located on the secure side of the concourse, the event offered attendees a first look at COS's expanding amenities. Guests were treated to local food, beer flights, beverage samples, and retail experiences, all while celebrating the progress being made at the airport.
Alex Kovacs, director of aviation at Colorado Springs Airport, expressed his gratitude to those in attendance. "Thank you for joining us as we celebrate the grand opening of Colorado Craft and Evolve by Hudson," he said. "These two additions significantly enhance the travel experience at COS. With new concessions, refreshed amenities, and ongoing modernization efforts, COS is becoming a more accessible, comfortable, and welcoming gateway for our community. We are proud of our progress, grateful for our partners, and excited for what's ahead. This is your airport, and we are here to serve you."
The opening of Colorado Craft and Evolve by Hudson marks a significant milestone in COS's ElevateCOS improvements. Evolve by Hudson expands the airport's retail offerings by joining two existing Hudson locations to provide travelers with greater convenience and a broader selection of travel essentials and specialty items.

Mayor Yemi Mobolade also spoke at the event about the importance of these improvements for both current travelers and future growth. "These enhancements not only improve and ease the travel experience today but also prepare COS for future growth without using taxpayer dollars," he stated. "The modernization effort extends beyond just the terminal itself. The airport has made significant progress on ramp construction and implementing a common-use system to increase competition among airlines and improve gate efficiency."
Jordi Martin-Consuegra, chief operating officer for Avolta North America, expressed his appreciation for the partnership between Avolta and Colorado Springs Airport. "This new location reflects our shared commitment to delivering high-quality, meaningful experiences for travelers," he said. "At Hudson, our purpose is simple: to make the traveler's journey as rewarding as the destination. We do that by providing convenience, quality, and a strong sense of place, and we believe this new store brings that promise to life in a fresh and engaging way."
Dylan Currier, owner of Colorado Craft, also spoke about the importance of showcasing local businesses at the airport. "Being local is who we are," he said. "We live and work in this community, and our goal is to give travelers an authentic taste of Colorado while creating a memorable first or last impression of the city."

Kyle Phillips, vice president of SSP America, echoed Currier's sentiments about bringing local brands into airports. "Colorado Craft is exactly the kind of brand we love bringing into airports because it offers travelers something they cannot get just anywhere," he stated. "It provides an immediate connection to Colorado Springs through an experience that feels distinctly local."
Mayor Mobolade also highlighted several key infrastructure and operational improvements that have been completed or are currently underway as part of COS's broader ElevateCOS modernization strategy. These include significant progress on ramp construction to enhance aircraft operations, implementation of a common-use system to improve gate efficiency and increase airline competition, installation of an advanced exit-lane security system to support safe and efficient passenger movement, completion of the federal inspection station in 2025 to expand international connectivity opportunities, completion of Phase 1 of the Milton Proby Parkway rehabilitation project to strengthen access to the airport, and continued development of Peak Innovation Park to support long-term economic growth.
The airport has even more enhancements planned for its continued growth. Construction on a new food court is set to begin in September, with Einstein Bros. Bagels and Smashburger expected to open in February. Street Eats by Brother Luck will follow shortly after.
