Founded in 2017, Blue Sparrow Coffee has earned a reputation for excellence by sourcing and serving coffee from some of the most respected roasters around the world. Over the years, it has become a cornerstone of Denver's vibrant third wave coffee movement, known for its design-forward spaces, rotating seasonal menus, and commitment to environmental responsibility.
In 2024, Blue Sparrow began roasting its own coffee, marking a major turning point in the company's evolution. What started as a neighborhood café has grown into a vertically integrated operation—selecting, roasting, and brewing its own carefully sourced beans. This new level of control allows the team to fine-tune every element of the coffee experience, from green coffee sourcing to final cup presentation.

"We've always strived to be one of the best coffee shops in Denver," said Jeffrey Knott, owner and founder of Blue Sparrow Coffee. "Roasting our own beans gives us the ability to take that commitment to the next level. We now have complete control over quality, sustainability, and the flavor profile of every cup we serve."
The transition to roasting was driven by a desire to deepen transparency and sustainability. Blue Sparrow works closely with importers and producers to ensure fair pricing and traceable sourcing, prioritizing farms that use regenerative practices and pay living wages to workers. Roasting is done in small batches with a data-driven approach, allowing the team to dial in roast profiles that highlight origin characteristics and push flavor boundaries.
This new award positions Blue Sparrow Coffee as not just a top contender for best coffee in Denver, but also as one of the most promising new coffee roasters in the United States. Industry professionals and fans alike are watching closely to see what's next.

Looking forward, the team does not have current plans to expand a wholesale program, and will focus on selling only through their brick and mortar stores. Educational initiatives like public cuppings, brewing classes, and sustainability workshops are also on the horizon.
"We've only just begun to explore what's possible," Knott said. "The best part of roasting is that it opens up a deeper connection with the coffee itself—and with our customers. We're excited to keep pushing boundaries and sharing that journey with the Denver community and beyond."
